 Nut free, Diary free, Egg Free, additive free



Great for school celebrations and parties where catering for allergic guests

THIS is certainly NOT the healthiest recipe or the usual recipe I would post on my site.  Nor is it the yummiest recipe  (because that can only be achieved using eggs and butter).  However, this is a simple, easy to make, moist and tasty enough cake for when you need to cater for children or adults who require NUT FREE, DIARY FEE and EGG FREE food.  This is also an additive free cake.



Here goes:


Sift the following DRY ingredients together into one bowl and mix through


1.5 cups white sugar

3 cups all-purpose flour

1/2 cup unsweetened cocoa powder

2 tsp bicarbonate of soda (baking soda)

**Half a cup of dark chocolate or chocolate chips ****(if you are catering for dairy free check the ingredients in the chocolate to ensure there are NO milk products in the dark chocolate.  Usually dark chocolate is dairy free, but some contain milk fats/milk solids)


Mix the following WET ingredients together into a separate bowl


2 cups warm water

1 cup of Rice Bran oil

2 tablespoons distilled white vinegar

1 tsp vanilla extractnd


Pour the wet ingredients slowly into the dry ingredients and mix thoroughtly until a smooth consistency.


OIL a cake tin or muffins trays and pour mixture in.


Bake at 180 deg for 40 min or until skewer comes out clean.  After 20/30 minutes I cover the cake with foil to prevent burning on top)


For larger muffins check at 20 minutes, smaller muffins check after 10-15 mins.


Icing Options


1. Dust with icing sugar


2. Melt chocolate with a tsp oil and smooth over top ****If catering for a diary allergy, choose a dark chocolate that contains NO milk solids/milk powder
