NUTRITIOUS BANANA MUFFINS OR BANANA LOAF    

nut free, gluten free               

Replace commercial cheap toxic muffins with nourishing ingredients like these:

Most muffins are made from white refined flour, white refined sugar, and if commercially baked, contain a concoction of additives, preservatives and toxic vegetable oils that stresses and depletes our bodies, often leaving us bloated, tired and still NOT NOURISHED!​

How to make nourishing muffins....
 
The texture sometimes is moist - a bit like a cheese cake because of the kefir/yoghurt......You can vary this recipe in so many ways:  add nuts, dried fruit, chocolate chips!  Best results will be if you start this 24 hours before you cook it!

 

Step One - the day before

 

12 - 24 hours before

 

2 cups of healthy choice flour (1 cup rice flour, 1 cup of wholewheat spelt flour, or replace 2 tablespoon of any of the flours with buckwheat flour)

 

2 cups of kefir or use organic biodynamic plain full fat yoghurt

 

Mix together in a glass dish all the flour ingredients and kefir until smooth consistency - if really thick then add more kefir/yoghurt . If runny, add more flour.....Cover and let it sit at room temperature for at least 12 - 24 hours).

 

Step Two - the next day

 

Turn your oven on to 180deg

 

Mix together 

 

3 organic or free range eggs beaten

1/2 cup of brown sugar

1/2 cup extra virgin olive oil

One large or two medium very ripe bananas mashed up

½ tsp vanilla extract

½ tsp cinnamon

zest of 1/8 lemon (optional)

1 tsp baking powder and 

½ tsp of bicarbonate soda

 

FOLD into the flour batter until incorporated.

 

Pour mixture into muffin containers (probably can fit 12 - 18) ...Sometimes I add a few choc chips or sultanas into the muffins here too

 

and cook for approx 25 - 30 minutes.  Test with a skewer.  It needs to be moist but not wet!

 

Or 

 

Pour into rectangle cake tin and bake for longer!

MILK KEFIR:  normalizes the activity of the stomach and intestines, has beneficial effects on the nervous system and metabolism, reduces the risk of cancer. Kefir includes up to 22 kinds of microorganisms.  

 

OLIVE OIL: Olive oil is also one of nature's healing wonders. Keeps the heart healthy, may reduce inflammation and the risk of certain cancers, and might even play a role in controlling diabetes and weight. Olive oil is a monounsaturated fat, which lowers bad cholesterol without affecting good cholesterol.

 

SPELT FLOUR - Is an excellent source of manganese, and a good source of protein, copper, and zinc. Spelt offers a broader spectrum of nutrients compared to other wheat flours. Spelt seems to cause less sensitivities in many people who are intolerant of wheat. 

 

BUCKWHEAT FLOUR - Is high in protein, antioxidants, minerals, vitamins and is wheat and gluten free.

 

RICE FLOUR - Is gluten free and therefore much easier to digest than regular flour.
